1 Box Cous Cous (I used Far East, Original, yields 4.5 cups)
2 cups water
1/4 red onion
1 medium roasted green bell pepper
3 tbsp olive oil
1 1/2 cups corn
1 can black beans


How Do I Make Cous Cous with veggines?

Here is how you make Cous Cous with veggines:

Bring 2 cups water and 1 tbsp olive oil to a boil. Add cous cous and cover. Remove from heat and let stand for 5 min. (these are the directions from the box)Brush 1 tbsp olive oil on green bell pepper. Roast over open flame. (I have a gas stove, so I just use a burner). Once charred, wrap in plastic wrap for 5-10 min. Unwrap and use edge of a knife to scrape off charred skin. Dice pepper. IN a small pan, heat 1 tbsp olive oil. Add red onion and allow 1 min to cook. Add corn (I used frozen corn) and drained can of black beans. Fluff cous cous with fork. Combine all ingredients in a large bowl.
