Here is how you make Curried Mediterranean Couscous:

Heat oil in 2 qt pot, add garlic and onion, saute until transluscent. Add 1 3/4 cup water, 1/4 tsp curry, spice packet from couscous, eggplant, rosemary and grated carrot. Bring to boil, boil about 3 minutes. Add couscous, cover, remove from heat, let sit 5 minutes. Stir in grape halves and serve.
