4 whole large eggs
1/3 cup liquid egg beaters (egg whites)
1 cup onion, chopped
1 cup marinated artichoke hearts (Kirkland brand = 112 grams)
4 slices Prusciutto di Parma (112 grams, Kirkland brand)
1/4 cup diced tomato, canned
2 tsp ground sage
1 tsp dried oregano
2 oz mozzarella, shredded
2 oz fontina cheese, shredded
1 tbsp Smart Balance butter spread (divided into 2)
2 cloves garlic, minced



How Do I Make TAPO Frittata?

Here is how you make TAPO Frittata:

Makes 8 1-cup servings (8 medium slice "pie" pieces)Set your oven to broil and get a 10" oven proof skillet (preferably cast iron) and set your 4 whole eggs out to rest at room temperature.Take 1/2 of Smart Balance butter spread and melt over medium heat on stove top in your skillet, add chopped onion and saute, stirring ocassionally (you are looking for a nice carmelization to happen here...not a burn). Meanwhile drain your artichoke hearts with a slotted spoon and cut into 1/4" cubes/slices, in a seperate bowl crack your eggs and add your and set aside. When your onions have started to turn translucent around the edges, salt and pepper to taste (remembering the Proscuitto, artichokes and tomatoes are going to add salt; so (GO LIGHTLY). Drain the tomatoes, measure out 1/4 cup and reserve the rest for another recipe. You can use fresh but you don't get the same results (yuck!!). Once the onions have presented with a nice golden brown add the garlic and saute for 2 minutes. Watch carefully don't burn, then add artichokes and tomatoes to heat through. Meanwhile beat the eggs and add to the mixture in the skillet. Cook until slighty done...then move to the oven and broil until puffy and golden brown.
