English Muffin, 2 muffins, fork split (4 halves)

Mozzarella Cheese, part skim milk, 4 oz (1/2 cup shredded or sliced), more to taste. For 20cal more a peice you can increase to 6oz (3/4cup)

Black Olives, 6 jumbo (a half small can sliced black olives)

Mushrooms, canned, .25 cup (half a small can sliced)

16-17 slices of turkey pepperoni (4-5 per muffin half)

Tomato Sauce, .25 cup (I use pizza sauce when I can find it, or sometimes thick spaghetti sauce from a jar or you can go without)

Dried Italian Herbs
Salt and Pepper to taste (optional)


How Do I Make Andi's English Muffin Pizzas?

Here is how you make Andi's English Muffin Pizzas:

Preheat toaster oven to 350 (works in regular oven also). Fork split the english muffins into halves. Bake English muffin halves for 5 minutes or until slightly crispy on outsides. I toast them in this fashion a little first to keep them from getting as soggy (this is the only chance you have to cook the top half of the 'crust' that'll be under the ingredients.Top each muffin half with about 1 tablespoon of tomato or pizza sauce, and spread evenly over the top. (you can also use pesto but use less then)Add just a few sprinkles or peices of mozzarella cheese directly ontop of sauce next (it helps stick the topping better so it doesn't slide off when you bite into it.Top with 4-5 peices of pepperoni per muffin half I cut them into quarters first (you can use low cal, turkey or alternative pepperoni, or canadian bacon, or omit the meat), sprinkle a tiny bit more cheese to keep the next layer togetherSplit sliced black olives and sliced canned mushrooms between the 4 'pizzas'. Press gently where needed to flatten and keep ingredients from rolling off .Sprinkle with dried italian herbs (this really enhances the flavors, you can find them in a mix in the spice section) and a little salt and pepper (optional but i put it on almost everything)Bake at 350 until cheese is melted on top. If desired you can set the oven or toaster oven to broil for a minute to help cook the top more without cooking the bottom as fast.Number of Servings: 4Recipe submitted by SparkPeople user ANDICOONS.
