1/4 c. minced shallots
2 cups vegetable broth
1/4 c. flour
1/4 c. white wine
1 tsp worcestershire
1/2 tsp basil
1/2 c. non-fat plain yogurt
1 tsp. cornstarch
1 cup milk, skim
1/2 c half and half
salt and pepper


How Do I Make Much Ado about Mushrooms?

Here is how you make Much Ado about Mushrooms:

Spray some non-stick spray in a saucepan and add shallots and garlic. Cook 1 minute. Add mushrooms and cook for 3-4 minutes. Add 1 1/2 cups of chicken broth. Mix remaining broth with flour until smooth. Add along with wine, worcestershire and basil. Stir well. Reduce heat, cover and simmer for 10 minutes, stirring occassionally. Transfer 1/2 the soup to blender or food processor, blend. Return to pan. Mix yogurt and cornstarch in small bowl.. Add to soup, along with milk and cream. Don't allow soup to boil.
