Here is how you make Upgraded NYT pancakes:

Mix flour, baking powder, sugar and salt. Beat the egg, milk and butter until blended. Pour the milk mixture into the flour mixture and stir only enough to moisten the dry ingredients. Do not beat or the pancakes will be tough. Heat a griddle and lightly grease it (or use oil spray). Drop the batter from the tip of a large spoon and bake until the entire surface of the pancake is dotted with holes. Turn and bake the other side until light brown.
