Here is how you make Pork with Mushroom Gravy:

Combine rice with 2 cups broth, 2 cups water and 1 tbsp coconut oil. Bring to a boil, cover, reduce heat and allow to simmer for 40 minutes.Slice tenderloin into 8 equal chops and season with salt & pepper. Heat 1 tbsp coconut oil in large frying pan. Brown chops in batches, about 2-3 minutes per side (depending on thickness). Remove chops to plate and set aside. Add chopped onion and garlic to pan and cook until onions are translucent. Add mushrooms and allow to cook until mushrooms have cooked down. Add 1 1/2 cups chicken broth and bring to a light boil. Add chops back to pan and allow to simmer for 15 minutes. Stir together coconut milk (or milk of choice) and flour until there are no lumps. Remove chops and add milk mixture and rosemary to pan. Continue to simmer until gravy reaches desired consistency.
