Drain salmon and remove bones and skin. Mix salmon, beaten egg and mashed potatoes until blended. Add breadcrumbs, salt and Italian seasoning to taste. Set oven to broil. Cover a baking pan with aluminum foil and spray foil lightly with non-stick spray. Form mixture into 4-5 inch patties on foil and broil until the tops are browned and the patties keep their shape.
