1 cup sliced mushrooms

1 c skim milk
1 cup eggbeaters
1/2 t. powdered mustard
dash paprika
juice of 1/2 lemon
3 oz low fat cheddar/colby cheese
1/2 t. salt
1/8 t. pepper

Here is how you make Crustless Crab Quiche:

Preheat oven to 400 degrees. Spray glass pie pan with Pam cooking spray. Sautee desired veggies in 1 tablespoon of olive oil until veggies are slightly cooked. Combine crab, cheese and juice of 1/2 of lemon (to taste). Pres mixture into pie pan. Whisk together remaining wet ingredients except paprika. Gently add sauteed vegetables on top of crab mixture. Then pour egg mixture on top of crab mixture. Sprinkle with paprika. Bake until set about 30 to 40 minutes.
