Here is how you make Amanda's Crustless Slimmy-Quiche:

Chop onions and spinach finely (minced). Combine with everything else other than cheese.Pour egg mixture into non-stick muffin tin, filling four with half the mixture. Separate slice of cheese into 4, and place them into cups. Pour remaining egg mixture on top. Make sure to fill the others with water for even cooking.All ovens are different, so keep an eye on it. It will be cooked when the middle isn't liquid anymore.Serve with a nice side salad with some fresh ingredients like fruit (to complement the heavier quiche mixture).
