1/2 C. toasted almonds
1 1/2 C. of beet/carrot or carrot juice
2 Tbsp minced fresh ginger
1 medium sized apple chopped
1 C. frozen peas
2 tsp EVOO
unsweetened coconut shavings (optional)

Here is how you make Red Quinoa with Peas:

in saucepan toast almonds for 3 - 5 mins, until golden brown (stir/shake). remove toasted almonds from saucepan, place in separate container and set aside to cool. Wipe saucepan clean. Add EVOO and saute onion for 2 - 3 mins (until translucent). Add ginger, beet/carrot juice, and quinoa. Bring mixture to boil, then reduce heat, cover and allow to simmer for 15 mins. When done add frozen peas and cover - allowing peas to thaw for about 2 mins. Add back in toasted almonds and chopped apple - and coconut shavings (if used).
