Garlic, 2 cloves
Onions, raw, .2 cup, chopped
Broccoli Slaw, 3 oz (this comes pre-bagged in many stores and has shredded carrots, broccoli stalk, and red cabbage. It can usually be found with the pre-bagged salads)
Egg, fresh, 1 large
Brown Rice,1 cup (PRE-COOKED)

Pepper, black
Soy Sauce
Ground Ginger or Cinnamon(opt)


How Do I Make Low Guilt Fried Rice and Veggies?

Here is how you make Low Guilt Fried Rice and Veggies:

Preheat large nonstick pan on medium heat. ( I prefer my non-stick wok)Spray lightly with non-stick cooking spray.Add olive oil and garlic.When garlic starts to sizzle add onions. Allow to cook for 1 minute then add brocoli slaw.Stir with tongs or chop-sticks until veggies are lightly cooked (I prefer them kind of crisp so I only do this for a few minutes)At this point I season with black pepper and sometime a small dash of ground ginger or cinnamon.Stir in Rice.Make a well in center of pan by moving the food to the edges. Spray bare spot with Cooking spray.(opt)Crack egg into well and lightly scramble in pan with chop-stick. When egg is finished cooking stir into rest of the ingredients to distribute.Then turn of heat, stir in soy sauce and serve.Can be used as side dish in smaller portions but I eat the whole thing for a very satisfying lunch.Number of Servings: 1Recipe submitted by SparkPeople user SADWHITEWOLF.
