2 cups of snap beans, topped and tailed and cut into 1 inch sections
1.5 cups of cherry tomatos, halved
1 yellow or orange bell pepper, seeded and cored, chopped into 1 inch pieces
1/2 cup tomato-based vegetable juice
1 tbsp extra virgin olive oil

Here is how you make Spicy Sweet Sausage and Rice One-Dish:

1. Follow the package instructions for the rice mix and set it to simmer on the stove (will take 35 minutes). While the rice is starting, clean and chop the veggies and sausage.2. In a deep-sided skillet, heat the olive oil over medium-low heat then saute the sausage and beans. After 7 minutes, add the tomatoes and bell pepper; turn the heat down to simmer. Add the vegetable juice and cover. Cook for ten minutes, stirring occasionally, then turn off the heat and let rest until the rice is done; the juice will thicken into a light sauce.Serve in one of two ways; meat and veggies over/along side rice on a plate, or mix the meat and veggies into the rice and let rest for 5 minutes for the flavors to mingle.Has a sweet-savory taste, and is a satisfying one-dish meal, albeit high in sodium. I usually serve it with a green salad or fresh sliced fruit, and ice-cold water to drink.
