In a large skillet heat olive oil. Add peppers, onions, carrots and mushrooms. Saute for about 3-4 minutes until peppers and onions are soft. Add chicken broth, rice, kidney beans and adobo seasoning mix well. Bring to a boil. Cover and simmer for about 10 minutes until rice is soft. Mix in tomatoes, cover and let sit for about 5 minutes.
