I use Goats Cheeses that are shaped like a little cylinder, this means I can cut it in two horizontally and grill the cut surface while the remaining 'skin' on the sides and base acts as a container for the melting cheese. If only cooking for one person, wrap the remaining half of the cheese and keep it in the fridge.1. Cut the Goats Cheese in two and place it cut side towards the grill, grill until the top is gently bubbling.2. Meanwhile, heat a non-stick pan and fry the thinly sliced Chorzio sauasge over a hot heat. A red oil oozes out of the sausage and this gives the flavour to the rest of the ingredients.3. Chop the onion and pepper finely and toss them in the pan with the chorzio as soon as the oil is released. Keeping tossing it over a hot heat so the peppers and onions begin to carmelise in the oil. It will be ready in about the same time as the Goats Cheese.To serve:Put rocket leaves on plate and top with the chorzio, onion and pepper mix. Toss lightly.Slide the bubbling goats cheese onto the side of the plate with a side garnish of redcurrant jelly.Optional:You can use scallions instead of onion and add garlic or chilli to the pan mix.
