Cook Quinoa* in Vegetable broth according to package directions; set aside to cool. Place next 3 items in large bowl, add cooled quinoa and toss. Mix maple syrup, lemon juice and olive oil together in small bowl. Add to salad and toss. Makes 6 servings. *Note: some Quinoa requires more or less liquid; refer to package direction for amount of broth to use. Also, I purchase the natural prewashed quinoa.
