Pre-heat oven to 425.Chop bacon. Wash potatoes and cut into 1/2 in. dice. Toss potatoes, bacon, onion and oil in a microwave safe bowl. Cover the bowl with plastic wrap and fold back one corner. Microwave on high for 7 to 10 minutes or until potatoes begin to cook and sizzle.Remove potato mixture and season with salt and black pepper.Transfer to a baking sheet. Bake for 20 minutes or to desired doneness.Combine mayonnaise, sour cream and vinaigrette.
