1/2 c. finely chopped red pepper
1/2 c. finely chopped green or red onion
1/4+ c. chopped cilantro
1 T. minced seeded jalepeno
1 can black beans, rinsed and drained

DRESSING:
1 tsp. cumin
6+ T. fresh lime juice
3 T. canola oil
2 T. water
1/2 tsp. kosher salt
1 garlic clove, minced

Here is how you make Andrea's Corn/Black Bean/Rice Salad:

Heat oil in a large skillet over med. heat.1/2 t. cumin. Add 3 1/3 cups water and 1/2 t. salt; bring to a boil. Cover, reduce heat, and simmer 25 minutes or until liquid is absorbed.Remove from heat, uncover and cool.Add corn and next six ingredients.Heat 1 teaspoon cumin in a small nonstick skillet over low heat for 30 seconds or until fragrant. Remove from heat and immedietly take out of the pan so it won't burn.Stir in 6 T. lime juice and the next 4 ingredients.
