Here is how you make Sauteed Ampalaya (Bittermelon):

Wash bittermelon. Slice in half lengthwise. With a dinner spoon, scrape the meat and the seeds of each slice. When done, cut each slice about 1/4 inch thick.Heat 2 tablespoons of oil in a wok on medium heat (adjust heat accordingly at any time based on your judgment). Add onion and cook until glossy. Add garlic and cook till light brown. Then add turmeric, stir lightly. Add tomatoes, ginger and salt. Adjust heat to low. Cover wok and cook tomatoes until soft, about 2 minutes. Then, add sliced ampalaya. Mix well so that the ampalaya will absorb the flavor of all the previous ingredients. Add water 1 tablespoon at a time. Cover and simmer for about 3 to 5 minutes or until ampalaya is soft but still a little crunchy.
