add oil to large pot, heat it then add onions sautee untill you can see thru them, about 5 mins. then add chopped brocoli and chicken broth and water if needed. Bring to boil, and then simmer untill brocoli is tender.In batches put your soup in a blender or food processor, and puree. Its think and creamy with out alot of fat!!! Very good and a great way to get your veggies without eating another salad!!! if you like you can sprinkle with a tbsp of lowfat gratted cheddar.
