Add the butternut squash and the sliced carrots, and stir well. Add the stock and bring to the boil. Reduce the heat and simmer until the squash and carrrots are tender, about 20 minutes. 3. Soya milk can be added near the end of cookng to make the soup a bit creamier, if you like.
