Crispy bacon, chopped into small strips

Here is how you make Celery Root Soup:

Melt butter over medium heat in a medium stock pot, add leek, cook and stir until soft, add garlic and cook until soft and fragrant.Add celery root, apple, broth and water, bring to a boil, then reduce heat, simmer about 40 minutes, or until celery root is soft enough to puree. If liquid gets too low to cover ingredients, add more water or broth.Puree soup in a blender or food processor. You may need to do this in two batches, and you may want to let the soup cool a bit first to avoid burning yourself.
