Heat the oil in a large pan and add the onion. Cook for 1 minute, adding a good pinch of sea salt (this helps draw out the flavour). Add the other vegetables (including the garlic), and stir to cover all the pieces in oil. Add the tin tomatoes and chilli powder and stir well. Add the liquid (water or stock) and bring back to the boil. Turn down heat and put lid on the pan. Simmer for 25 minutes or until the vegetables are soft. Allow to cool slightly, then liquidise. A little more water or stock may be added if soup too thick. Add salt and pepper to taste.
