I call this "A+" because it is very high in vitamin A...and pretty tasty, too! ** You can lower the amount of sodium by rinsing all the canned vegetables in a colander before adding to the soup mixture.**Heat oil in large pot. Saute onion and celery for 3 minutes. Add chicken broth, tomatoes, carrots, potatoes, and zucchini and cook for 10 minutes or until gentle boil. Add all remaining ingredients (except cilantro) and cook for 15 minutes more on medium low. Add cilantro and cook for 5 minutes. Serve piping hot. You may top with 2% shredded cheese ...mmmm...tasty!
