The base is 2 cups veggie or chicken broth, a large can of crushed tomatoes, and a bag of frozen spinach (and/or Kale) in a pot. You can add water if you want to. Season with tarragon, thyme, and oregano ( or your favorite seasonings). You can add a california or mediterannean blend of frozen vegetables for color and texture. Add any veggies you like and want to throw in. Depending on my mood, I may add corn, beans, and onions for flavor and carbs. Sometimes with leftovers I add tofu for protein.
