1/2 medium white onion, diced
8 oz white button mushrooms, diced fine (I run my mushrooms through my food processor)
1 garlic clove, finely minced
20 baby spinach leaves
1/4 cup Kraft Mexican Blend Cheese
3 tbsp. butter
8 Don Marcos Home style Flour Tortillas


How Do I Make Caramalized Onion, Mushroom and Spinach Quesadillas?

Here is how you make Caramalized Onion, Mushroom and Spinach Quesadillas:

In a medium skillet, melt 2 tbsp. over low heat. Add onions, stir often, until they start to turn golden brown. (Low and slow, baby!) Once they are about half way to caramelized, add the mushrooms. You can add the third tbsp. of butter if needed. Once the mushrooms are soft and brown, add the minced garlic, stir for about 30 seconds and remove pan from heat. Put in a bowl and keep warm if you are using the same skillet to toast the quesadillas. Top 4 tortillas with 1/4 of the mushroom mixture. Tear 5 leaves over each tortilla. Top with 1 tbsp. of cheese and then place a second tortilla on top. Heat a (dry) skillet until hot and place one quesadilla on it. Cook for a minute - minute and a half, until the bottom is golden brown, time depends on how hot you have it. Carefully flip it over and cook the second side. The cheese should be melted and the spinach slightly wilted. Repeat for the remaining 3 quesadillas. Cut into wedges and serve hot. Add sour cream, salsa etc if desired (not added in nutrition info).
