Here is how you make Spinach Medoly:

Prep:Chop onion and garlic. Slice zucchini and squash in similar size pieces.Cook:Heat the olive oil then add the onions, once translucent add mushrooms and garlic. Cook for about 2 minutes. Then add zucchini and squash, dash the cumin and add salt and pepper to taste. Cook for about 2-3 minutes. Next add the spinach and allow to steam for about 1 minute then add the rice vinegar and cook until spinach is reduce and done. Take from heat and spritz with lime juice!
