Here is how you make Stuffed Zucchini Boats:

Slice zucchini lengthwise. Carefully scoop out the pulp so that only the shell is left. Place zucchini on the grill until tender--or microwave on high until tender, but not mushy. Meanwhile, saute pulp, peppers and onion in olive oil until tender crisp. Add shredded pork and cook until heated through.Dissolve bullion cube in boiling water.
