This was another recipe I threw together with things in the fridge and surprised myself. I really enjoy it!! It is higher in sodium but it's one of those recipes you can adjust to taste and give and take on. Add more broccoli, fresh tomatoes instead of sun dried, add garlic, less feta more mozzarella.... etc!! Just have fun with it!!

2 Whole Wheat Tortillas
1/4 cup Feta
2 singe pkgs. of the Kraft 100 calorie Mozzarella, Garlic and Herb Cheese packs
1 cup broccoli, chopped to desired texture
2 Tbs Sun-Dried Tomatoes packed in Herbed Oil
2 Tbs parsley, minced


How Do I Make Cheesy Broccoli and Tomato Single Pizzas?

Here is how you make Cheesy Broccoli and Tomato Single Pizzas:

Heat griddle pan over medium heat and toast the whole wheat tortillas to make a crisp 'pizza' crust. Drain the oil from the 2 tablespoons of sun dried tomatoes and, if desired, spread oil evenly over one side of each tortilla crust. Thoroughly combine feta, cheese packs, broccoli, sun dried tomatoes and parsley. Divide evenly among the two shells on top of the spread of oil. Bake in oven for approx. 5 minutes or until mozzarella looks bubbly. I like to then turn on the broiler to get the top a little golden. Slice and enjoy. Notes: I like the crunch of the raw broccoli, but feel free to steam to desired doneness if you'd like. It does get a little soft when I make it but I chop in very fine with a few pulses of the food processor. Also, you can make this an appetizer for guests as well.
