1 sm. onion, diced
2 green onions, sliced
1 clove garlic, minced
1 cup quinoa
1 tsp oregano
2 cups veg or chicken broth
1/4 cup pine nuts (more is better!)
fresh parsley
1 tsp lemon juice (optional)


How Do I Make Stuffed Tomato Quinoa?

Here is how you make Stuffed Tomato Quinoa:

Heat oil in sauce pan. Add onions and garlic and cook until soft.Add quinoa and organo: saute 1 min. Add broth. Bring to simmer and cover. Cook until liquid is absorbed (15-20 minutes). Chill if you want to eat it as-is. I've been experimenting with adding a tsp of lemon juice, and that makes it better.Optional but yummy:Cut tops off tomatoes and clean out insides. Cut leftover tomato parts into small pieces and stir into quinoa. Fill tomatoes with quinoa, then top with mozzerella. Broil until cheese is melted and tomato is warm. Salt and pepper to taste.
