1x 185g can tuna in light (sunflower) oil
2 cups Fresh Mushrooms, sliced
1 large onion, sliced
1 cup cooked white long grain rice
3 oz mozzarella cheese, grated
1 oz cheddar cheese, grated
1 cup frozen peas, cooked

Here is how you make Tuna Stuffed Peppers:

Cut the tops off the peppers and de-seed. Place them in a microwaveable bowl with a tablespoon of water. Cover and Microwave on high for 5 minutes (depending on the size of your peppers).Fry onions in a teaspoon of the oil from the tuna until soft, add mushrooms and fry until cooked. Mix tuna, onion and mushrooms with rice and peas and use to stuff the peppers, pressing down firmly as you go. Sprinkle the cheese over the top and pop in a medium oven (200 degrees centigrade) for 15 minutes to warm through and melt the cheese.Serve immediately.
