4 slices Swiss Cheese
4 strips bacon
1 sheet puff pastry
4 tsp dijon mustard
1 egg, blended with 1 tsp water
1/4 cup white wine vinegar
2 tsp sugar
1 cup cherry tomatoes, halved
1 avocado, peeled, pitted & sliced
1/4 cup scallions, sliced

Here is how you make Turkey-Bacon Turnovers:

Preheat oven to 400; line a baking sheet with parchmentPrepare turkey, cheese & bacon. Roll pastry on a floured surface to 11" square. Cut into 4 squares; spread each with 1 tsp mustard. Arrange turkey, bacon & cheese on half of each pastry square, tearing or folding them to fit. Brush edges of pastry with egg wash, fold to form a triangle, and seal shut using the tines of a fork. Place turnovers on prepared backing sheet, brush with more egg wash, and sprinkle with kosher salt. Bake 25 minutes, or until pastry is golden and crisp.Stir vinegar, sugar and salt and pepper (to taste) together in a bowl. Add remaining ingredients and toss gently to combine.
