In a food processor:Combine spinach, tofu, garbanzon beans, garlic & onion. Process until a coarse paste forms. Remove to a large mixing bowl.In mixing bowl:Add russet potato, sweet potato, and (1/2) salt & spice mixture. Mix until well blended. Taste. Add additional salt/spices to taste. (tip) Once spice is adequate add turkey and mix just until combined. Chill 15-30 minutes to set. Preheat oven to 350 (F).On two cookie sheets lined with parchment, form mixture into roughly 2" diameter sliders (approx. 1/8 cup each). Mixture will be rather moist, but much of the moisture evaporates during cooking.Bake 20 minutes until firm and lightly browned. Allow to cool, wrap extra servings in saran wrap and freeze, they maintain structural integrity of freezing and thaw quickly.Enjoy over brown rice, buckwheat noodles, or tucked into a small pita as an entree.
