2 lbs lean ground turkey (or chicken or lean beef)
1/2 cup gluten free bread or cracker crumbs
2 tbsps mixed Italian style herbs (basil, oregano, parsley)
1/2 tsp cayenne pepper
1 egg beaten
2 tbsps parmesan cheese

1/5 cup low fat, gluten free cream of mushroom soup (or alfredo sauce, or salsa, or pasta sauce or pesto)

Toppings:

2 slices turkey bacon cut in strips
1 1/2 cups cooked broccoli (leftover or blanched)
1 cup sliced fresh mushrooms
1/2 onion diced small
hot pickled pepper rings
6 oz grated skim Mozzarella (or cheddar or gouda or jack)
4 Tbsps grated parmesan

(you can use ANY veggies you like - sweet potato chunks are amazing on pizza, sliced tomatoes, green or red sweet peppers, roasted eggplant, grilled asparagus, whatever you like)

Here is how you make Turkey Meatloaf Pizza with Broccoli:

Mix together the "crust ingredients" . Preheat the oven to 350 degrees. Lightly grease and cornmeal a round pizza pan. Pat your meatloaf into the pan to form the crust. Create a small lip around the edge.Put your sauce on the pizza and spread around. Top with the toppings of your choice ending with the cheeses and then bacon and pepper rings.Bake for 20 to 30 mins until the cheese is bubbly and the meatloaf is cooked through. Serve with a salad.The nutrition info is for a turkey crust with the toppings I listed but this "pizza" lends itself to so many versions. Mexican pizza made with lean beef, topped with peppers, salsa and jack cheese, maybe even some black beans and corn. Use your imagination.
