*Safeway 15-Bean Soup Mix (dry), 2 cups (soak several hours)

Here is how you make Turkey stew:

Soak bean mix in separate container.Put turkey carcas , 1 onion (choped), celery (chppped), 1/2 chopped parsley and any personal seasonings into very large pot with water to the top. Simmer 2 to 3 hours when stock is ready, turkey will fall apart and water will be about 5" from the top. Remove from heat and scoop out carcas and botes. Sort out gristle and bones and put meat aside in bite size chunks.Add soaked beans to soup while choping remaining vegetablesAdd ingedients in order. Carrots SLICED, baby red potatoes (cubed), yellow onions (chopped coarse), green beans cut bite-size, mushrooms (sliced), spinach leaves chopped coarse, remaining parsely chopped coarse, 4 large BAKED sweet potatoes (cubed), frozen corn, turnkey meat When above ingredients are added, simmer another hour or two. Ifyou run out of room, let it simmer down until you have room. The pot will be FULL!!!Add thawd frozen peas at te end when you remove from heat. They'll keep their bright green color and won't get mushy.When cool enough to work with, ladel into storage containers. It's easier to finish cooling in containers. sop freezes well. Defrost in refrigerator overnight.
