Here is how you make Vegan Comfort Food:

Bring 3 cups water to boil. Add red lentils and return to boil. Add dried onions, shallots, and/or garlic as desired. Add 1-2 tablespoons of your favorite curry powder. (I love Penzeys Maharaja curry powder). Cook for 30-40 minutes, until lentils are mushy. Add salt, Earth Balance and coconut oil. Stir.In a separate pot, bring to boil 2 cups of water. Add quinoa and return to boil.
