Heat oil in seasoned cast iron skillet. Saute well drained vegetables and garlic for 3-5 minutes. Beat eggs with whisk. Add flour and beat until well dissolved. Add milk. Season with salt pepper and other herbs and spices. Pour egg mixture over vegetables. Cover and cook until eggs are well set on bottom. Remove cover and sprinkle with cheese. Broil under hot flame for 4 minutes until cheese is well browned. Let sit for 5 minutes before cutting into quarters.
