1 1/2 cups egg substitute
3 large eggs
1 1/2 cups shredded 2% cheddar ( i used sharp)
1 1/2 cups shredded 2% colby jack cheese
1/2 cup skim milk
1/2 cup all purpose flour ( i used unbleached)
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. cayenne pepper( ground red pepper)
1 tsp. celery seed
1 16 oz. carton 2% cottage cheese ( personally I like small curd)
cooking spray
4 cups sliced zucchini
2 cups diced potato with onion ( Simply Potatoes is what I used)
1 -8 oz. pkg. sliced mushrooms
2 tomatoes sliced ( i used roma, doesn't matter nutritionally)


How Do I Make Garden Vegetable Quiche ( crustless)?

Here is how you make Garden Vegetable Quiche ( crustless):

Preheat oven to 400 degrees. Beat egg substitute and eggs in a large bowl until fluffy. Add 3/4 cup of each type of shredded cheese, milk, flour, baking powder, salt , cayenne pepper, celery seed and cottage cheese. Coat pan with cooking spray. Add zucchini, potatoes with onion, and mushrooms. Saute for 5 minutes or until tender. Add sauteed vegetables to egg mixture. Pour into a 3 quart casserole coated with cooking spray. Top with the remaining 3/4 cup of each type of shredded cheese. Arrange tomato slices on top of cheese. Bake at 400 degrees for 15 minutes. Reduce oven temperature to 350 degrees, do not remove quiche from oven and bake for an additional 35 minutes or until lightly browned and set.Number of Servings: 10Recipe submitted by SparkPeople user EMERALDJULES.
