3 cups homemade vegetable stock
1 tbsp olive oil
1 small red onion, diced
4 garlic cloves, minced
1 1/2 cups bulgur - cracked wheat
1 tsp salt
1/2 fennel bulb
1 small red pepper
1 large zucchini
2 carrots
2 tsp dried savory or italian seasoning
1/2 cup white wine
1/2 bunch of italian parsley, minced


How Do I Make Cracked Wheat Pilaf?

Here is how you make Cracked Wheat Pilaf:

Heat the vegetable stock and keep warm. Dice the fennel, zucchini, peppers and carrots into 1/8" cubes and set aside.Heat the olive oil in a large pot. Add onion and garlic and saute over medium heat until soft and golden. Add bulghur, salt and bay leaf. Saute stirring for several minutes to toast the grains.Turn up the heat and stir in the diced vegetables and savory. Saute for several minutes, then add the wine. Let the wine be absorbed and then add the warm stock. Bring to a boil, stir, cover and reduce heat to low. After 25 minutes, uncover and check to see if tender.
