1-Red Pepper, thinly sliced
Salt & Pepper to taste
3-Tomatoes (About 1lb.) Chopped
1/2 tsp. - Dried Thyme
4-Lg. Wheat Tortillas
2oz. Shredded pepper jack cheese


How Do I Make Ratatouille Wraps?

Here is how you make Ratatouille Wraps:

Spray large pan with olive oil and add eggplant and stir fry over medium heat for approximately 5 minutes.Spray eggplant with olive oil and add zucchini, onion, pepper and a 1/4 tsp. of salt and pepper. Stir fry for approximately 6 minutes. Stir in tomatoes and thyme partially cover and cook for 5 minutes until the liquid is cooked off.Transfer to a large bowl and wipe the pan out.Place the wraps on a work surface and sprinkle 1/4 of the shredded cheese in the center of each wrap and top with 1 cup of ratatouille. Fold Burrito style to close.Spray pan once again with olive oil and place 2 wraps in pan seam side down, and cook over medium heat until brown (approximately 4 minutes.
