1 Bell Pepper, chopped (any color)
1 15.5 ounce can of Black Beans (drained)
1 cup Frozen Corn
1.5 tablespoons Chili Powder
2 teaspoons Cumin Powder
1.5 cups cheese, shredded - Monterey Jack
2 16 ounce containers of Salsa (one medium, one mild)
10-12 6"-8" Tortillas, flour or corn


How Do I Make Veggie Baked Enchiladas?

Here is how you make Veggie Baked Enchiladas:

Makes 6-8 servings depending on how hungry you are!Preheat oven to 400 degrees F.Combine the onion, bell pepper, black beans, corn, spices and 1/2 cup of cheese in a large bowl. Mix so spices are evenly distributed. Spread 8 oz. (half a container) of salsa evening over the bottom of a 9"x13" baking dish. Roll about 1/3 cup of the vegetable mixture in tortillas, layering over the bottom of the baking dish. When one layer is complete (5-6 enchiladas) spread another 8 oz. of salsa over top. Sprinkle 1/2 cup cheese over layer. Roll the rest of the vegetable mixture up in the tortillas, creating another layer in the baking dish. Top with the final container of salsa to cover (I used the medium on top). Cover the dish with aluminum foil and bake. After 20 minutes remove from the oven and sprinkle remaining cheese on top. Bake for another 5-10 minutes uncovered or until cheese starts bubbling. Serve with salsa, cilantro, sour cream, etc. Keeps in the fridge for a week but enchiladas have a tendency to get soggy.
