1 cup frozen corn kernels
1/3 cup shredded cheddar, divided
12 6 inch corn tortillas

Here is how you make Black Bean and Corn Flautas:

Serves 6 - 2 flautas per serving1) heat oil in skillet over medium heat. Cook onions 3 to 5 minutes, or until soft. Add garlic, cook 1 minute, or until translucent and fragrant.2) Stir in beans, chili powder, and 1 cup water. Reduce heat and simmer 10 minutes, or until most liquid has evaporated. Remove from heat. Mash beans, leaving a few beans whole. Stir in 1 cup salsa, corn and 1/4 cup of the cheese. Cool mixture.3) Preheat oven to 425. Coat a baking sheet with cooking spray. Lay out tortillas. Spoon 1/4 cup bean mixture down the center of each tortilla. Roll tortillas around mixture and secure with a toothpick. Set flauta onto prepared baking sheet. Sprinkle with remaining cheese.
