This is a modified version of a wonderful recipe from the New York Times' "Recipes for Health" series ... I've reduced the amount of cheese and canola oil so that one serving is comes to fewer than 500 calories. Not exactly 'diet' food, but definitely healthy ... For best results, I recommend cooking up the black beans yourself with a bit of onion and garlic and then letting them sit in the fridge over night. Make a big batch; freeze some, make tortillas with some and use the rest for a scrumptious black bean soup.

Cooked black beans -2 cup (or 1 large can)
Tomato Sauce - 1 cup
Crumbled Feta Cheese - 1/2 cup

Chopped Cilantro - 1/2 c
Chopped walnuts - 1/4 - 1/8 cup (*Optional: Recipe calorie count does not include walnuts, so you'll need to track them separately)


How Do I Make Rustic Black Bean and Feta Enchiladas?

Here is how you make Rustic Black Bean and Feta Enchiladas:

Preheat oven to 350, and prepare a small baking dish with 1 tsp oil or cooking spray. Set aside.Prepare your tortillas. Heat 1 tsp oil in a small skillet. Mix in cumin, cayenne, black pepper and salt, then add a portion of tomato sauce. Stir on low heat. Place a tortilla into mixture for approximately10 seconds (tortilla will "buckle"). Flip. Stir into mixture for another 10 - 20 seconds. Set aside in the baking pan or on a baking sheet. Repeat with remaining 3 tortillas, removing excess sauce with your spatula. Prepare your enchiladas. Place a spoonful of black beans at center of tortilla. Add sprinkling of feta. Fold and place in baking pan, seam down. Repeat 3 times. Top enchiladas with remaining black beans and feta.
