Cook the meat with the seasoning packet (heat the beans with the packet if not using meat) and set aside. Fill each enchilada with the sour cream mixture, a spoon of refried beans, a spoon of black beans, a spoon of meat, two spoons of sauce, and a sprinkling of cheese.
