1 can black beans, drained and rinsed
1/3 cup veggie stock
1/2 teaspoon cumin
1/2 teaspoon chili powder

1 avocado, diced
flour tortillas, warmed

Here is how you make Black Bean and Roasted Corn Tacos:

Preheat oven to 425 degrees.Veggies:1. Toss corn, tomatoes, bell pepper and scallion in a bowl with 1 T olive oil. Add cumin, chili powder, cayenne pepper and adobo to taste. 2. Put on a parchment covered baking sheet and roast for 20 minutes, turning once after 10 minutes, until corn is browned in places. Remove from oven.3. Slice scallion into small pieces once cool enough to handle, then mix back in with other veggies.While the veggies roast, make the Beans:1. Heat 1 Tablespoon olive oil in a saucepan. Add onion and garlic. Sautee until softened, approx. 5 minutes.2. Add black beans. Cook for 2 minutes, then mash using potato masher. 3. Add veggie stock and mash/stir beans until stock is absorbed and beans are creamy. Turn off heat and set aside.To assemble:Spread bean mixture onto a tortilla.
