This is my take on refried beans - I use dried black beans and soak them - if I am short on time I substitute in 4 cans of black beans with liquid, but I omit the salt. The chipotle pepper creates heat (do not minced - leave whole - for more heat add 2 chipolte peppers and or 1tsp red chillies - ground. This freezes well. OR use canned beans with the liquid. In deep sauce pan, heat olive oil, add onions, and jalapeno peppers (I run these thru my food processor so they are very fine) and garlic. Cook for a few minutes. Add black beans & liquid, and salt (if using) and the optional chillies. simmer on very low heat for 30-45min (lid on) . - it will look a bit runny still. Mash mixture in pan with potato masher. Let simmer (uncovered) for another couple of minutes. Serve or freeze. Makes 7 cups - nutrition is based on a 1/2 c serving.
