Add egg beaters, turn once and turn off heat (will keep cooking). Turn heat on for other pan. while warming up, shred baby bel (I use and egg slicer). Put tortilla in pan, and as soon as one side is warm, flip and put shredded cheese on top. Continue heating for another 30 seconds or so. Slide onto a plate, and add egg/potato mixture. Add salsa if desired, and roll up to eat. Makes 1 serving, although can easily be multiplied for additional servings.
