Sautee the peppers with the oil in a non-stick pan over medium heat for about 2 or 3 minutes. Add the spices, saute for one more minute. Add the wine and let it cook a bit more slowly for another 2 minutes.Add the tomato puree, with a pinch of sugar. If you need, you may add a little bit of water. Let it cook for 20 minutes or until the peppers are soft and the sauce is starting to thicken. Make two "wells" on the sauce and pour the eggs, cover the pan and let them cook for 10-15 minutes over low heat.
