Saute vegetables (bell pepper, tomato, onion and jalapeno) in nonstick frying pan with olive oil and salt & Pepper to taste. In 1qt Saucepan heat entire can of Refried beans.Preheat Oven to 350 degrees with main rack in center of oven.Once vegetables are cooked until onions are translucent, combine them with the already browned turkey. Stir in 1/4 cup salsa. On each tortilla, spoon 1/4 cup refried beans onto the center of the tortilla. Then spoon 1/4 cup (roughly) of meat and vegetable mixture on top of the refried beans. To fold burritos, fold right 1" of tortilla towards the center, fold bottom 1" up to center and fold left 1" of tortilla towards the center and roll up tucking the filling inside, seal with small "smudge" of refried beans.Place in 9x13" baking dish and spoon approximately 1/4 cup enchilada sauce over each and bake for approximately 15-20 minutes.Top with salsa, sour cream and shredded romaine lettuce.makes 4 servings of 1 burrito each.
