Add taco seasoning and water, and simmer for 5 minutes. Cook white rice (boil until soft & water is gone). Saute diced onion, green pepper, tomato, and minced garlic in pan with butter or margarine until tender. Add cumin for flavor. Pour enchilada sauce into approx. 9x13 baking dish. Stir in corn, black beans, sliced green olives, and ground beef. Gently stir in cooked white rice. Bake at 350 degrees for 35 minutes.
